ANNIE'S CITRUS MARINATED OLIVES

INGREDIENTS

  • 2 cups Castelvetrano olives with pits
  • ¾ cup Brightland extra-virgin olive oil
  • ½ cup red wine vinegar
  • 6 cloves garlic, thinly sliced
  • 1 teaspoon fennel seeds
  • 4 sprigs thyme
  • 2 sprigs rosemary
  • Peels of 1 lemon
  • 2 cups Castelvetrano olives with pits

  • ½ cup red wine vinegar

  • 1 teaspoon fennel seeds
  • 4 sprigs thyme
  • 2 sprigs rosemary
  • Peels of 1 lemon
  • INSTRUCTIONS
    INSTRUCTIONS

    1. Combine olive oil, vinegar, and garlic in a saucepan and heat until warm over low heat
    2. Remove from heat and stir in lemon rind, thyme, rosemary, and fennel seeds
    3. Place olives in a heat proof container and pour in the olive oil mixture
    4. Let marinate overnight
    5. To serve, drain olives and place in a bowl and garnish with sprigs of thyme and rosemary, plus lemon peels

    ANNIE'S OLIVE OIL WASHED NEGRONI

  • ½ cup olive oil washed gin
  • ½ cup Campari
  • ½ cup sweet vermouth
  • 4 orange peels
  • ½ cup olive oil washed gin
  • ½ cup Campari
  • ½ cup sweet vermouth
  • INSTRUCTIONS
    INSTRUCTIONS

    1. Combine olive oil washed gin (recipe below), Campari, and sweet vermouth in a pitcher filled with ice and stir together
    2. Fill 4 glasses with ice
    3. Divide the Negroni between the 4 glasses and garnish with orange peels

    4. Olive oil washed gin:
      750 mL bottle gin
      ¼ cup olive oil

      Combine olive oil and gin and shake well. Transfer mixture to freezer and store overnight.
