UPSIDE DOWN TOMATO AND HERB PUFF PASTRY

  • 12 tomato slices
  • 2 tbsp fresh herbs, like rosemary or thyme
  • 1 tbsp Brightland olive oil
  • 1 puff pastry sheet
  • 3 tbsp feta cheese
  • 3 tbsp goat cheese
  • Egg wash
  • Salt and pepper to taste
  • 12 tomato slices

  • 1 puff pastry sheet
  • 3 tbsp feta cheese
  • 3 tbsp goat cheese
  • Egg wash
  • Salt and pepper to taste
  • INSTRUCTIONS
    INSTRUCTIONS

    1. Preheat oven to 350°F and line a baking sheet with parchment paper
    2. Add the tomato slices, fresh herbs, and olive oil to a mixing bowl. Season with salt and pepper and toss together gently
    3. Layer the tomato slices onto the baking sheet, tucking the slices close together
    4. Cut the puff pastry sheet into four even pieces
    5. Crumble the feta and spread the goat cheese onto each piece of puff pastry
    6. Place the puff pastry over the tomatoes, spread-side-down, and press down on each side
    7. Pierce the top of the dough with a fork. Brush the top of the puff pastry with egg wash
    8. Bake for 20 minutes, or until golden brown and flaky
    9. Remove from oven. Flip the puff pastry over with a spatula, and serve warm
