Chicken and Rice

  • 1 whole chicken
  • 2 cups chicken broth (from boiling the chicken)
  • 2 cups jasmine rice
  • 1 knob ginger
  • 3 scallions
  • 1 tbsp soy sauce
  • Sesame oil

  • ½ cup tamari or soy sauce
  • 1 inch grated ginger
  • 1 bunch finely chopped scallions
  • ⅛ tsp fish sauce
  • ⅛ tsp rice vinegar
  • ⅛ tsp toasted sesame oil
  • ⅛ tsp agave

  • INSTRUCTIONS
    INSTRUCTIONS

    1. Clean the whole chicken and pat dry. Season with salt and place in a large pot of filtered water (add enough water so there is about 1 inch of water above the chicken). Add a large knob of ginger, three scallions, and 1 tbsp of soy sauce to the water
    2. Bring to a boil, then cover and simmer for 30 minutes or until the chicken is fully cooked
    3. Take the chicken out and place in an ice bath to stop cooking. Once cooled, pat dry and cover in sesame oil to keep from drying
    4. Rinse 2 cups of rice and cook with 2 cups of chicken broth from boiling the chicken
    5. Once the rice is ready, plate in a large bowl or platter. Slice chicken and place onto rice. Drizzle a generous amount of sauce on the chicken and serve
